One Pan Roast Recipe

Main Ingredients

  • 8 chicken pieces
  • 3 Tbsp (45ml) olive oil
  • Salt and milled pepper
  • 1 packet (500g) diced butternut
  • 1 packet (500g) diced sweet potato
  • 1 punnet (250g) baby tomatoes
  • Handful fresh basil

Method

  1. Preheat oven to 180°C.
  2. Rub chicken pieces with 2 tsp (10ml) olive oil and season.
  3. Place butternut, potatoes and tomatoes in a single layer in a large roasting pan.
  4. Add remaining oil, season and toss to coat.
  5. Top with chicken pieces.
  6. Roast for 45-60 minutes until veg is golden and meat juices run clear.
  7. Sprinkle with basil and serve.
