Marry Me Creamy Baked Cabbage
Roasted cabbage baked in a creamy cheese sauce with garlic, herbs and sun-dried tomatoes. A rich, indulgent vegetable bake with irresistible flavour.
Ingredients List
- 1 large green cabbage, cut into wedges
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 125 ml fresh cream
- 125 g cream cheese
- 1 cup chicken or vegetable stock
- ½ cup grated Parmesan or hard cheese
- ½ tsp dried or fresh thyme
- ½ tsp chilli flakes (optional)
- ½ cup sun-dried tomatoes, chopped
- Fresh parsley, for garnish
Instructions:
- Preheat oven to 180°C (356°F). Cut cabbage into 8 wedges, keeping the core intact.
- Arrange in a baking dish, drizzle with olive oil, and season.
- Roast for 20 minutes until slightly golden.
- Meanwhile, sauté onion and garlic until soft.
- Add stock to deglaze. Stir in cream cheese, grated cheese, cream, thyme, and chilli flakes. Whisk until smooth.
- Add sun-dried tomatoes and simmer gently.
- Pour sauce over cabbage and bake for 15–20 minutes until bubbling and golden.
- Finish with fresh parsley before serving.
