INGREDIENTS
- Dressing:
- 1 red chilli, chopped
- 1 clove garlic, finely chopped
- 2 spring onions, chopped
- 2 Tbsp (30ml) white-wine vinegar
- 2 Tbsp (30ml) water
- Juice (30ml) of 1 lime
- 1 Tbsp (15ml) grated palm sugar or castor sugar
- Slaw:
- 1 firm mango, cut into matchsticks
- ¼ pineapple, cut into matchsticks
- 4 cups (200g) shredded red and green cabbage
- Handful fresh coriander, chopped
- Burgers:
- 4 burger buns
- Mayonnaise, for spreading
- 1 packet (4) PnP halloumi burgers
- 1 Tbsp (15ml) olive oil
- Salt and milled pepper
METHOD
- Combine dressing ingredients and set aside.
- Toss mango, pineapple, cabbage and coriander together to make slaw.
- Heat a griddle pan and toast buns until lightly charred, then spread with mayonnaise.
- Toss slaw and dressing together.
- Drizzle halloumi with oil, season and cook in the griddle pan until lightly charred on both sides.
- Serve buns topped with slaw and halloumi burgers.
