Halloumi Burgers With Zingy Slaw

Serves 4 | Less than 30 minutes

INGREDIENTS

  • Dressing:
  • 1 red chilli, chopped
  • 1 clove garlic, finely chopped
  • 2 spring onions, chopped
  • 2 Tbsp (30ml) white-wine vinegar
  • 2 Tbsp (30ml) water
  • Juice (30ml) of 1 lime
  • 1 Tbsp (15ml) grated palm sugar or castor sugar
  • Slaw:
  • 1 firm mango, cut into matchsticks
  • ¼ pineapple, cut into matchsticks
  • 4 cups (200g) shredded red and green cabbage
  • Handful fresh coriander, chopped
  • Burgers:
  • 4 burger buns
  • Mayonnaise, for spreading
  • 1 packet (4) PnP halloumi burgers
  • 1 Tbsp (15ml) olive oil
  • Salt and milled pepper

METHOD

  1. Combine dressing ingredients and set aside.
  2. Toss mango, pineapple, cabbage and coriander together to make slaw.
  3. Heat a griddle pan and toast buns until lightly charred, then spread with mayonnaise.
  4. Toss slaw and dressing together.
  5. Drizzle halloumi with oil, season and cook in the griddle pan until lightly charred on both sides.
  6. Serve buns topped with slaw and halloumi burgers.
