Ingredients:
- 2 Tbsp (30ml) olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 3 cloves garlic, chopped
- ½ (60g) chorizo sausage, sliced
- 8 pork sausages
- 2 tsp (10ml) paprika
- 1 tsp (5ml) ground cumin
- 1 tsp (5ml) ground coriander
- 1 Tbsp (15ml) dried thyme, plus extra for serving
- ½ cup (125ml) red wine
- 2 cans (400g each) cherry tomatoes
- Salt and milled pepper
- 1 can (410g) baked beans
Method:
- Heat oil in a large saucepan and fry onion, carrot, celery and peppers until tender.
- Add garlic, chorizo, pork sausages, paprika, cumin, coriander and thyme.
- Fry for 5 minutes.
- Add red wine and cherry tomatoes. Season.
- Simmer for 30-40 minutes.
- Stir in baked beans and simmer for a further 10 minutes.
- Sprinkle with the extra thyme and serve.
