Sausage and Bean Casserole

Ingredients:

  • 2 Tbsp (30ml) olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 3 cloves garlic, chopped
  • ½ (60g) chorizo sausage, sliced
  • 8 pork sausages
  • 2 tsp (10ml) paprika
  • 1 tsp (5ml) ground cumin
  • 1 tsp (5ml) ground coriander
  • 1 Tbsp (15ml) dried thyme, plus extra for serving
  • ½ cup (125ml) red wine
  • 2 cans (400g each) cherry tomatoes
  • Salt and milled pepper
  • 1 can (410g) baked beans

Method:

  1. Heat oil in a large saucepan and fry onion, carrot, celery and peppers until tender.
  2. Add garlic, chorizo, pork sausages, paprika, cumin, coriander and thyme.
  3. Fry for 5 minutes.
  4. Add red wine and cherry tomatoes. Season.
  5. Simmer for 30-40 minutes.
  6. Stir in baked beans and simmer for a further 10 minutes.
  7. Sprinkle with the extra thyme and serve.
